I am selective and this is my meat market of choice (consistent quality and service). Based on past family vacation experiences, I have spent too much time hunting for quality meats. So, I decided to buy meat and take it on our most recent vacation. The butcher noted that I was purchasing larger quantities than usual and inquired. Then prompt vacuum packed all of the products for travel. I love Chop.
On vacation we went to the local farmers market. In the evenings, we all gathered to cook and enjoy our meals. Having excellent meat sure made it easy:
My must have standards bacon, Kobe bavette, venison pate, Hungarian sausage, ground beef and ground pork. Side notes: I purchased lard this weekend and make the most delicious biscuits ever! If you are looking for something uncommon give them a call.
I tried this place out as I work fairly close and am always looking for a new place to eat. I chose to basically create a Club sandwich and it ended up being one of the best I've had. Everything is fresh, the meat is incredible and the bread was really good. My only gripe would be the price, it's a tad expensive at $8 for a sandwich. I do find that fairly typical at all the good places though.
Unbeatable. Best paté I've had in my life. I used to work in the farmers market and we'd trade with the folks at Chop. I came to crave their farmhouse paté like crazy, every week... The flavors, high quality ingredients, perfectly fine-tuned ratio, and the spices, and great texture. Goes so well with a fresh baguette! Can't wait to visit their brick and mortar location.
If you like locally sourced meats, cheeses, veggies, baked goods, pickles, and charcuterie? Then go here. It's amazing. I drive 7 miles to pick up meat, and a sandwich. There beef jerky is amazing also!
Chop makes the best charcuterie in the city of Portland. Quite possibly in the United States. I have many years experience living and eating meat in France. I can say that Chop would be a place that you would still go out of your way to get to, even if it were in Europe.
Awesome selection of high end ingredients. Olive oils! Balsamic! MEAT! Love this place. Everytime I'm here I give myself plenty of time to just wander the store. Great stuff!
Amazing huge sandwiches with tons of house cured meat and fresh bread. A really great place for lunch, I've been coming here for years and have never been disappointed.
A great experience tasting the wine and meats. I found really good stuff. The sandwiches are excellent.
Best source of charcuterie in PDX, and it's inside the best gourmet supermarket. Try the pâté. This is where you go to get ingrdients for that special meal.

I found Bloody sausage (Boudin noir). My French-Caribbean Christnas food ! Great fish, meat, pastured for sure!
