Yum!!. My brother and his wife took me to Dillas while I was visiting them in Dallas . Very, very tasty. Friendly staff. I wish there was a dilla's in Idaho where I live
IMPRESSED!. I'm not easily impressed, especially with fast food, but this was such a pleasant surprise. So glad we gave it a try! I had the Bluebonnet and it was over-flowing with delicious ingredients. I'll be back and will bring my kids next time ... it'll likely be their new favorite place. (Some people will say it's expensive for fast food, but I have to say, you can't compare Dilla's quality and freshness with the cheap, processed quesadillas you get elsewhere. No comparison.) Two thumbs up.
November 2015 Update:
I have been back multiple times. I have dropped my rating from 4.5 to 4.0. I miss having the owners present. They bring a whole different interaction from the employees when they are there. It's rather robotic when they are gone. I still love the quesadillas. It does take awhile to make one, so wait times after you order can be long especially during peak lunch hours.

New Concept Great Food. Dillas pronounced dill-uhs is a concept opening that the owner has been dreaming about since college some 10 years ago. The name is a Napoleon Dynamite reference where his grandmother tells him to go get some quesa-dillas.
The property is a converted Jack in the Box. You order your food and then take a seat. They call out your name when the food is ready. It comes out pretty fast. They also have a drive through to pick up a Dillas on the run.
All of their ingredients are fresh with nothing frozen. The food is great. The tortilla they use is fresh and crisped just right during the cooking. I have tried the Oinker, Blue Bonnet, Black & Bleu, Gordo, Lonestar and Chicken Hatch. Oinker (pulled pork), Lonestar (brisket) and Chicken Hatch (chicken with hatch chilies) are my favorite so far. The jalapeno ranch dip is really good.
Pricing is reasonable. A combo meal includes a Dilla, two sides, and a drink for $8. They have three side choices: fries, citrus corn salad and fudge praline.
Congrulations on opening your dream restaurant. Best of luck, and I will be back many times.
